23 January 2013 - Zucchini from Walyo Yerta


 
I went to visit Walyo Yerta Community Gardens
in the south Adelaide City Parklands
 
They generously gave me this
mega-huge organically-grown zucchini
which I made into veggie & cashew curry
with a Herbie's spice mix

 
Meanwhile my friend Mawarini has embarked on another collaboration
"creating stories that aim to help children understand
about staying true to oneself and learning to accept others
despite differences in looks, cultures and personality".

    1. 1/2 small cauliflower
      1 medium carrot
      2 zucchinis (or half a very large one!)
      1 small red capsicum
      4 medium-size ripe tomatoes
      1-2 tablespoons olive oil
      2 tablespoons Herbies Vegetable Curry Spice Mix
      salt to taste
      water


      Chop the vegetables into similar size pieces.

      In large saucepan, heat olive oil and stir in the curry powder to mix.

      Add chopped vegetables (except tomatoes) and stir gently to coat veggies with the curry mixture.

      Stir in chopped tomatoes.

      Add some water if more liquid is required (approx 1/2 cup).

      Taste and add salt to taste (there is none in the Herbie's Curry)

      Bring to boil. Cover with lid and reduce heat to simmer on very low heat for about 20 minutes or until veggies are tender but not too soft.

      Serve with rice, dahl, chapati or naan bread.

      Serves 4.

      *** If you want a hotter curry add some fresh or dried chillies when you mix spice into the oil.

      Ingredients in Herbie's Vegetable Curry spice mix (if you're looking for something similar):
      Coriander Seed, Sweet Paprika, Turmeric, Cumin Seed, Yellow & Brown Mustard Seed, Fennel Seed, Cassia Bark, Ginger, Ajowan Seed, Green Cardamom and Asafoetida (compounded with rice flour)

      No I'm not vegetarian but I don't often cook meat.
