2 zucchinis ...1/2 small cauliflower<br />1 medium carrot<br />2 zucchinis (or half a very large one!)<br />1 small red capsicum<br />4 medium-size ripe tomatoes<br />1-2 tablespoons olive oil<br />2 tablespoons Herbies Vegetable Curry Spice Mix<br />salt to taste<br />water<br /><br /><br />Chop the vegetables into similar size pieces. <br /><br />In large saucepan, heat olive oil and stir in the curry powder to mix.<br /> <br />Add chopped vegetables (except tomatoes) and stir gently to coat veggies with the curry mixture. <br /><br />Stir in chopped tomatoes. <br /><br />Add some water if more liquid is required (approx 1/2 cup). <br /><br />Taste and add salt to taste (there is none in the Herbie's Curry)<br /><br />Bring to boil.
